This quick chicken and rice recipe is the perfect solution for dinner on a busy night! One of our family’s favorites, this is a simple and delicious meal that everyone will love. With only five ingredients and 20 minutes of cooking time, you’ll have dinner ready in a flash!

One Pot Meal

My secret to saving time, energy, and… well, my sanity… is throwing together one pot meals. Using just one dish to cook means that I am juggling less at the stove, and cleanup after dinner is a breeze!

While sheet pan meals are a great “one pan meal,” sometimes I prefer to use the stove instead of the oven. Cooking everything in one pot is faster, and I don’t heat up the house in the process!

We pick everything up at Walmart (their grocery pickup option is super convenient) which means extra savings on time and money.

How to Make Quick Chicken and Rice

This recipe is one that my mom used to make when I was little, but I’ve tweaked it to be even more delicious! It’s one of my favorite comfort food meals, and I know your family will love it too.

My secret is using Swanson® Natural Goodness Chicken Broth instead of plain water when cooking rice. It adds so much flavor and it’s the perfect shortcut to truly delicious recipes – and not just for soups!

Swanson® broths are made from the perfect balance of high quality stock, farm grown vegetables, and seasonings. Seriously, I keep my pantry stocked so I always have broth on hand for cooking. Make sure to grab a few extra cartons when you’re at Walmart!

Once the chicken is thawed, cut it into bite-size chunks so it will cook more quickly. This step only takes about two minutes, and saves more time in the end.

Next, heat a large pot over medium heat and drizzle with a little oil. This keeps the chicken from sticking to the pot.

Toss in the chicken and stir it around until it is partially cooked (about 3-4 minutes). Then pour in the carton of Swanson® Chicken Broth, rice, and frozen mixed vegetables. Give it a quick stir and bring everything to a boil.

Once it’s boiling, reduce the heat to low, cover with a lid, and let it cook for about 15 minutes. That’s it!

You can add a little salt and pepper to taste, but I find that the broth adds enough flavor that I don’t need to add more.

Ingredients

  • 2 Chicken breasts or thighs, cut into chunks
  • 32 oz carton Swanson® Natural Goodness Chicken Broth
  • 2 cups rice
  • 1 cup frozen mixed vegetables
  • Salt and pepper to taste

Instructions

    Heat large pot with drizzle of oil.

    Add cut up chicken to pot, stirring until chicken begins to brown (about 3-4 min).

    Add Swanson® broth, rice, and vegetables to pot and bring to a boil.

    Reduce heat to low, cover, and cook for 15 minutes. Serve.
