Baked Brie with Cranberries, Pecans, and Honey

Baked brie has become on of my favorite indulgences over the past year. Or if I’m being totally honest, any type of baked cheese mixed with fruit is a tasty treat. Brie, however, is my number one. And on New Year’s Eve, it seemed like the perfect way to snack on one final yummy dish before starting over with my more strict meal plan tomorrow (which sadly does NOT include brie, baked or not).

If you’ve been following my blog for a while, you know that I prefer to eat whole, healthy, clean foods 80-90% of the time. I can’t fool myself into thinking this appetizer is healthy in anyway…but it IS a very simple and easy recipe that uses mostly fresh ingredients. And only 4 ingredients at that! So when it comes to less-than-diet-friendly foods, this one is on my list of acceptable things to eat.

I had some extra cranberries left over from the Christmas sangria I made last weekend, so I thought adding them to the baked brie would be a festive combination. And I was correct! The Southern Girl in me wanted some pecans in the mix, so I tossed a few of those in as well. I figured the sharpness of the brie and the tartness of the cranberries could use a touch of sweetness, so I added in some honey crystals to help lighten the flavor.

I don’t know about you, but I usually hate cooking with honey. That’s mostly because I don’t like to measure the sticky, sweet mess. How are you supposed to add a tablespoon of something to a recipe when half of it stays stuck to the spoon? Do you just squirt it in and eyeball it? Do you overfill the spoon, knowing all of it won’t drizzle off before you grow five new gray hairs? Luckily I had some granulated Nektar Honey Crystals so I could easily measure the honey and sprinkle it on top. No mess!

I couldn’t believe how well this turned out. So warm and creamy with some extra crunch from the pecans…and the best part is that nobody else in my house wants to eat it! Haha alll mine! How lucky can I get? Here’s the recipe:

  1. I have to say that I prefer my Brie uncooked, but the idea of adding cranberries and pecans to the mix is interesting!

  2. I want to like brie SO badly. It looks amazing and all of my friends love it…it’s at every party I go to this time of year…but it just tastes like a dirty gym sock to me! lol Your recipe sounds delish, though! I just wish I could get over how awful brie tastes to me…
